1. Prepare the Espresso Dip: Brew 2 cups of strong espresso and let it cool. Optionally, add 2 tablespoons of coffee liqueur for an extra flavor boost.
2. Whip the Cream: In a large bowl, whip the heavy cream, mascarpone, sugar, and vanilla extract until smooth and fluffy.
3. Layer the Cookies: Quickly dip each chocolate sandwich cookie into the cooled espresso (don’t soak for too long, or they’ll fall apart!). Place a layer of dipped cookies on the bottom of a serving dish.
4. Layer the Cream: Spread half of the mascarpone mixture over the cookies, making sure to create an even layer. Add another layer of dipped cookies on top of the cream.
