This sandwich brings together the comforting flavors of melted mozzarella and grilled veggies in every bite, all while being so quick and easy to make!

Quick Steps ✨

  • Prep your sandwich ingredients: slice mozzarella, tomato, and chop sun-dried tomatoes.
  • Layer mozzarella, tomatoes, and arugula between slices of bread.
  • Brush the outside with olive oil and grill in a pan until golden brown.
  • Flip and cook the other side until the cheese is melty.
  • Slice in half and serve hot!
  • Step by Step Instructions 📝

    1. Prepare your ingredients: Start by slicing the mozzarella cheese and fresh tomatoes. Chop the sun-dried tomatoes into smaller pieces, and rinse and dry the arugula.

    2. Assemble the sandwich: On one slice of sourdough bread, layer the mozzarella cheese first, followed by the tomato slices, chopped sun-dried tomatoes, and a handful of arugula. Add a pinch of salt and pepper to taste. Top it off with the second slice of bread.

    3. Brush with olive oil: Lightly brush the outside of both slices of bread with olive oil. This will help the sandwich get a golden, crispy crust when grilled.

    4. Grill the sandwich: Heat a pan over medium heat. Place the sandwich in the pan and press it down slightly with a spatula. Cook for about 2-3 minutes on one side, until the bread turns golden brown and the cheese begins to melt.

    5. Flip and finish: Carefully flip the sandwich and grill the other side for another 2-3 minutes, until the cheese is fully melted and the bread is crispy on both sides. Remove from the pan, let it cool for a moment, then slice in half and serve immediately!

  • Add a spread of pesto or hummus for extra flavor.
  • Useful Notes 📝

  • Crispy bread: For extra crispiness, use a heavy pan or press the sandwich slightly while grilling.
